Made from hand-harvested Sauvignon Blanc, collected in two selective pickings of golden grapes at the optimum aromatic stage. After a brief period of skin contact and a slow extraction, fermentation takes place in stainless steel vats; the wine is aged for about six months on the lees. This is an elegant, unoaked, white Bordeaux; richly textural with citrus, aromatic and floral notes: lime blossom and tarragon both feature. The finish is precise and chiselled with smoky, mineral notes supporting the fruit.
